Oh how I have struggled this summer with cooking for the first time in my life. See, usually Andrew grills all summer and my kitchen is clean, but since we eat with the boyz every night, and Andrew does not get home until 530 or later with the boyz, grilling has not worked out so much. So I have had to be creative and plan ahead. For our grilled chicken salads this week, Andrew is grilling the meat today with our Steaks for dinner tonight. I will use extra bacon from the weekend to make pasta carbonara. I am making a big batch of taco meat and freeze it into dinner size portions.
Also, it has been so hot and trying to get the boyz to drink enough water has been a challenge when the pool or water table is not up. I read an article in Parents Magazine about easy ways to keep your kids hydrated this summer. They suggested adding lemons, limes, oranges or cucumbers to ice water to make it more appealing. Also, just giving them watermelon can be hydrating. My kids love sweet ice tea. I decided to make a different version for the summer. Studies have shown tea is good for you and drinking non-caffeinated tea is equal to drinking water. Here is the recipe:
Boil water to fill 2/3 of your pitcher.
Pour the water over four tea bags of a fruity tea (we have tried Ginger Peach and Black Current Black Tea)
Steep for 4 minutes.
Remove tea bags and add 1/3 to 1/2 cup of honey (depending on how sweet you like it)
Add any sort of fruit (the ginger peach tea, we added just lemon, on the Black Current, we added pineapple and Black Rasberries).
Let cool and refrigerate or serve over ice.
DELICIOUS!!
